Herby Potato Croutons

These tasty, crisp, fluffy-on-the-inside potato balls made a great toddler snack, ideal for baby led weaning and are brilliant as an alternative to croutons in soup or salad.

 

Recipe:

2 Medium potatoes, peeled, cooked & mashed

1 Tbsp Grated Parmesan

1 Tbsp Chopped fresh herbs (e.g. parsley, dill, basil)

Optional: Salt & Pepper

Method:

Mash all ingredients together. Roll in to small balls (or finger shapes for baby led weaning). Place on a baking tray, spray with a little oil and bake in a preheated oven at 200C for 15mins or until crisp and golden. Alternatively, bake in an airfryer at 200C for 10 mins.

These can make a great low-fat snack also, for anyone following slimming world or similar!
